Simplified Pizza in a Tray

This is a simplified version for a fluffy pizza, that optimizes for result to effort ratio instead of trying to achieve perfection.

Ingredients for 4 hungry people  

Procedure

  1. Mix flour and dry yeast;
  2. Add 80% of the water (310g) and mix for a few minutes;
  3. Dissolve 12g of salt into the remaining 80ml of water, wait 10 minutes and then add the solution to the flour;
  4. Let the dough rest for 30 minutes, then portion it for the trays;
  5. Let each portion rest for 1h, then work them in the trays;
  6. Let the dough rest in the tray for approximately 2h in a warm place;
  7. Remove the pizza dough and preheat the oven at 250-300°C with the stone leaving a 10-15 cm gap from the top of the oven;
  8. Add the tomato sauce on the pizza;
  9. Cook the pizza in the oven for 4-6 minutes depending on temperature and thickness;
  10. Add the toppings and serve.
