Simplified Pizza in a Tray
This is a simplified version for a fluffy pizza, that optimizes for result to effort ratio instead of trying to achieve perfection.
Ingredients for 4 hungry people
- 600g high protein wheat flour (14-15g/100g)
- 390g water
- 12g salt
- 6g dry yeast
- 250g tomato pulp;
- toppings
- planetary mixer (optional)
- pizza stone or pizza oven
- Mix flour and dry yeast;
- Add 80% of the water (310g) and mix for a few minutes;
- Dissolve 12g of salt into the remaining 80ml of water, wait 10 minutes and then add the solution to the flour;
- Let the dough rest for 30 minutes, then portion it for the trays;
- Let each portion rest for 1h, then work them in the trays;
- Let the dough rest in the tray for approximately 2h in a warm place;
- Remove the pizza dough and preheat the oven at 250-300°C with the
stone leaving a 10-15 cm gap from the top of the oven;
- Add the tomato sauce on the pizza;
- Cook the pizza in the oven for 4-6 minutes depending on temperature and thickness;
- Add the toppings and serve.
